As LED said, try a Karaoke program -- but your mileage may vary.

A common Karaoke setup heavily mutes the midrange frequencies where most vocal information is found, on the assumption that someone who is singing along will overpower the residual voice, and also compensate for the lost musical information.

If your real goal is a pure instrumental via signal processing, well...that may be more difficult to obtain.
