AFAIK, you can. The serving machine simply needs two NICs, preferably NOT the same brand so as to avoid driver issues.
The one huge caveat with cable is that you place your computers on a wide-area network with lots of other machines = serious security issue.
A software firewall helps but a hardware router/firewall gives you more security, and also any machine can access the connection regardless if any of the others are up and running. With ICS your host system, of course, has to be up and running for the other machine(s) to access.
