What would happen is that it would work normally, provided you make good connections and insulate them properly. There are commercial Y-splitters that do the same thing, except to avoid cutting, those use a female Molex on the input side (and then two male Molex on the output side, of course).

The main limitation is the current-capacity of the wires; you won't come anywhere near it with a pair of disk drives. If your connections are poor the wires will heat up, though, which is obviously bad.
