Tag RAM is, indeed, ancient history. With any modern system, you should be able to support any amount of RAM up to the 4GB limit (or more up to the motherboard limit if you use a 64-bit AMD/Intel system, but >4GB won't benefit you much unless you also run a 64-bit OS with it). You may still run into a chipset/motherboard support limit, but that's not the same as the old days -- for example, you decide to buy a Sempron setup; 4GB support is theoretically possible, but you only have three memory slots, and you learn that the board can't handle DIMMs larger than 1GB. So your limit would be 3 x 1GB = 3GB.

With the nForce variants, you have two distinct memory channels that are accessed independently by the chipset. So yes, you would need at least two DIMMs to get dual-channel support but they don't have to be matched. All that is critical is that each DIMM is minimally rated at the bus speed of your processor (133, 166, or 200MHz).
