I haven't had any trouble yet with shrinkage when jerkin young venision, but old bucks can produce some stringy tough jerky, especially when cut from scared sections of meat. Those old boys have been around awhile and can have some deep battle scars. Sometimes it becomes necessary to carve out the just the backstrap and rump roast, discard the rest and wash and clean well to remove those pesky hairs and other contaminates before processing. |
