What OS will you be running? Winders doesn't support 64 bit Opterons yet (they'll work fine in 32 bit mode though), so if that's your OS of choice you might want to go with the dual AMPs.

As far as the disks go, how would a pair (or four, if you're set on having 160GB) of SATA WD raptors and a RAID controller price? They run at 10K and have 8MB caches.
