depends on the processor you are looking at. Or are you reading this from the System Properties applet of an NT machine?

However, in general:

x86: x86 instruction-set architecture, i.e. all PC-market processors except for Apple. This includes all Intel processors EXCEPT the Itanium, all AMD processors, and all VIA C3 processors. The Transmeta Crusoe also executes x86 but uses an unusual technique to do so.

family 6: sixth-generation architecture, IIRC...for example, the 8086/8088 were the first, the 286 was second, 386 third, 486 fourth, the Pentium/K5/6x86 were fifth, and the Pentium Pro/all PII & PIII/K6-x are the sixth. The P4 is the seventh, and the Athlon is usually counted as a seventh.

model 3: Not sure. Could refer to a third major revision in the architecture family.

stepping 4: Fourth stepping of this core. Cores are revised regularly to make small changes, correct minor bugs, whatever. Each minor revision is known as a 'stepping' of that core.
