You said "AZ11" so I assume your board was made by FIC, and as such, it should have a fairly standard BIOS layout.
So, look for an option on the initial BIOS screen such as "Hardware monitor" or similar. It should be pretty close to whereever you saw the temperature display.
IF an auto-shutdown feature exists (most systems will show temperature but not all have an auto-shutdown), there should be "CPU warning temperature" and "CPU shutdown temperature" options, which can be set to a range of something like [DISABLED/55C/60C/65C/70C/75C].
