The only distro I've used so far is SuSE. From what I have heard, SuSE is by far the most easy to configure with its yast (yet-another-setup-tool).
Installing it is easier than installing windows. burn an iso image, boot from the cd. the installer will the lead you trough the process. make sure you install 'X' too. X is the grafical interface. You will be prompted to choose a window manager. I use KDE - works great for me.
Then configure to boot into X directly and you're done.
The hardware you list should be supported without a problem (I still have problem on my notebook with a mobility radeon - but that's not suse's fault... it's xfree86.org's fault)
Great to hear you want to play with linux. Don't forget to learn (at least a few) bash (the command prompt) command, okay?
