L2 cache generally provides a nice assist for office applications and certain types of server environments.
Your photo editing might benefit somewhat from a slower processor with eight times as much cache, but the digital video will tend to be bound by memory bandwidth. Both also require certain amounts of raw FPU power.
In other words (and this is just my very limited opinion), I don't think the dual 550 Xeons would give you any benefits over your current setup.
