Yes to all your questions except for the last one. The disc works just like a hard drive. You can add, delete, or format the whole thing and start over.
However the CDR as long as you don't plan on playing it in a standard Car CD or Home CD Player, you can write to again. You just wouldn't be able to delete or format.
