Had to download the kernel headers and source, force the RPM update on the kernel again (not sure why), compiled the nVidia drivers with the new Kernel headers, reinstalled the new drivers, and everything works now. Even played Unreal Tournament for a few rounds 
I think all the problems I was having with Mandrake 8.1 are related to a bad CDROM drive. It was spitting out bad data, and I think it corrupted the image file on install. I put in an older, slower CDROM drive when I installed RedHat (because the redhat installer actually caught the CRC errors) and everything has been solid. Unfortunately, I'm vested now and don't really want to push my luck by reinstalling Mandrake. It was a lot of work to get those nVidia drivers going, and I don't want to trash all that and start over
