I'm using an AK31 Rev3.1 right now and I never even bothered disabling the onboard sound (in part because I'm using the onboard's mic input for a game but that's another story). I just have the Live! Value set as the default for most of the entries in the "Sound & Multimedia" control panel.
I wouldn't worry about "fast" at the high end, only "slow"...and few if any of the top boards qualify as slow right now. I venture even if you find one board that is a few percent quicker than another you wouldn't even notice it, apart from having a lighter wallet.
If all you want is decent quality sound you can get Live! boards fairly cheap right now, if you want top of the line then the Audigy is the newest but there are also similar good offerings from other vendors (e.g. Hercules Game Theater, Philips ProMedia...)
