This is how I had to do it:

1) Set BIOS to boot from PCI
2) Boot into Windows
3) Go to Display control panel, settings
4) If you see second monitor, but it is grayed out, right click on it. Select "Activate", and it should come on.

If you don't see it, then it's probably what Ben said.
