Try Jane's F-15 (in expert mode). It's as realistic as it gets, very cheap (now anyway), and with Voodoo cards it looks amazing.
Also try Microsofts Flight Simulator (Professional Edition), and their Combat Simulator, although I find the latter boring after a while.
I also think that jane's F-18 might be good (haven't played it).
Avoid jane's WWWII Fighters (almost Arcade like).
In general get games that value realism over eye candy, are the ones that I still find to provide a better and more enjoyable playing experience. Some may have both, like the F-15.
