On the front half of a 5.1 you will hear "centered" sounds coming mostly from the center channel, with distinct left and right, whereas on the front half of a 4-speaker setup, centered sounds are "phantomed" by playing them as a mono sound from the left and right speakers simultaneously. The latter approach works, but it tends to take your "centered" sounds (such as voice dialog) and smear them across the entire front of the sound stage.

The bass is, for the most part, non-directional so the extra sub will mostly just make things louder.

I personally prefer the effect of 5.1 over 4-channel, but your listening preferences may vary
